1、 掌握每天的工作任务，现场亲力制作、督促检查。
2、 把好质量关，做好菜式的出品、规格和数量，减少损耗，降低成本。
3、 加强厨房内各种设备的管理，合理使用和保养。
4、 认真学习有关菜单的食品制作方法，提高业务水平，严格按照食品的卫生要求制作食品。
5、 负责厨房中所有食品的热加工处理，合理使用原材料。
6、 掌握好蒸、煮、煎、炸、焗、扒、炒等全面技术操作。出菜做到快，色、香、味俱全。
7、 带领班组人员定期搞好卫生清洁工作，做到卫生工作时时搞，每周安排一天大搞卫生。
8、 抓好纪律，严格执行本公司的一切规章制度。
9、 协助厨师长设计、改进菜单的菜式品种，使之更有吸引力，以助推销。
10、节约用水、用电，做到人离关水、电及煤气掣，合理使用各项设施。
11、服从上司的工作安排，完成分派的工作任务。
1、掌握厨房管理基础理论，熟悉中、西菜点的烹饪知识和要求及其操作特点，懂得食品原料知识、成本核算方法以及厨房仓储知识，了解厨房各类机械器具的使用和保养知识。
2、 能按工作规范和质量要求独立进行工作。
3、具有成本控制能力，责任心强。
