A little taste of your day-to-day:
Every day is different, but you’ll mostly be:
- Assist in supervising daily kitchen activities, providing instruction to less experienced culinary staff
- Check culinary staff methods of preparation, portion sizes and timeliness in food preparation
- Promote teamwork and quality service through daily communication and coordination with other departments
- Prepare batch recipes, food items and assist in all kitchen activities to ensure that guests receive high quality food items in a timely manner
- Coordinate the smooth service in relation to the pass and pick-up of food
- Assist in determining the minimum and maximum stocks of all food, material and equipment in a timely manner
- Communicate ordering needs, and complete orders using hotel system (Foodbuy)
- Understand Brand Standards and lead the team in complying with brand requirements
- Assist in creating and testing new recipes and menu design, as well as food costing
- Assist in inspecting the cleanliness of the floor and all kitchen stations.
- Maintain and strictly abide by proper storage procedures and state sanitation and health regulations
- May serve as Sous / Banquet Chef in their absence as required
- You’ll make sure our dishes are always at their best - we have standards - but it’s down to you to make that sure the dining experience is special and memorable for guests
What We need from you:
- Certificate IV in Commercial Cookery (or equivalent) is essential
- 2 years’ experience working as a chef in either hotel or restaurant environments
- Experience working in a culinary environment servicing multiple outlets or a conference facility will be key and exposure to an open kitchen environment would be an advantage
- Excellent verbal and written communication skills and the ability to engage well with both the team and guests
- Flexibility to work days, nights and holidays where required
