Duties and Responsibilities
As Pastry Chef, reporting directly to the Culinary Director, I will assume full responsibility for the efficient operation of the Pastry area, delivering exceptional products and service in line with Six Senses brand standards and the philosophy of Eat With Six Senses.
The duties and responsibilities will include:
- Manage all aspects of the Pastry Kitchen, supervising the preparation, baking and finishing of desserts, breads and baked goods in accordance with brand standards and guest expectations.
- Develop, test and cost new recipes and menu items, ensuring creativity, seasonality and alignment with wellness and sustainability principles. Maintain updated and accurate recipes and costing for all products prepared.
- Continually focus on the evolution and rejuvenation of the pastry offering, regularly assessing menus and concepts to ensure they remain innovative, relevant and aligned with Eat With Six Senses practices.
- Collaborate closely with the Culinary Director and wider culinary team to create exceptional guest experiences through unique, locally inspired and responsibly sourced pastry creations.
- Monitor the sorting of food and material waste, ensuring efficient food waste management and supporting composting and sustainability initiatives.
- Instill a cost-conscious philosophy through training, coaching and education while maintaining the highest standards of quality and presentation.
- Lead, mentor and develop the pastry team, fostering a culture of creativity, continuous learning, collaboration and operational excellence.
- Ensure all food safety, hygiene and sanitation standards are consistently maintained in accordance with local regulations and Six Senses policies.
- Operate the department in compliance with all legal, statutory and financial requirements, ensuring that documentation, reporting systems, contractual obligations, safety and security protocols, communication standards, host management practices and budgetary controls are effectively implemented, reviewed and maintained to support the successful operation of the resort.
- Support and champion the resort’s sustainability, wellness and community initiatives, ensuring they are reflected throughout the pastry operation and guest experience.
