As Assistant Food & Beverage Manager, I will fully comprehend the vision of Six Senses to help people reconnect with themselves, others and the world around them and our values of local sensitivity and global sensibility, crafted experiences, emotional hospitality, responsible and caring, fun and quirky and pioneering wellness.
Sustainability, Wellness and Out of the Ordinary experiences are at the core of everything we do at Six Senses. I will safeguard these pillars and its strategic planning and development and ensure all directives, practices and initiatives are implemented, embraced, adopted within the resort.
Duties and Responsibilities
- Oversee daily F&B operations to ensure smooth service delivery and consistency in line with Six Senses standards.
- Act as a mentor to the F&B team, providing training and fostering and an environment of continuous improvement.
- Take the lead during the absence of the Director of F&B, displaying confidence in decision-making and leadership.
- Engage with guests and hosts regularly, collecting feedback and using it to elevate the guest dining experience.
- Foster close collaboration with other departments to create holistic guest experiences that go beyond F&B.
- Actively contribute to creating a strong team culture, where team members feel valued and motivated to perform at their best.
- Lead a team of engaged and experienced hosts to provide the Six Senses exceptional standards of service.
- Deliver a crafted experience for all our guests and foster a desirable place to work for all our hosts.
- Keep abreast of industry trends and practices and update knowledge and skills to improve the product and service offering.
- Products and services will be constantly assessed and reviewed to remain relevant, innovative and in keeping with Six Senses F&B experiences, wellness, and sustainability practices.
- Focus on quality and consistency, and review and coach regularly through my physical presence in department, our rigorous adherence to LQA standards.
- In conjunction with F&B Director, responsible for an exceptional guest experience service in Food and Beverage areas.
- Effectively carry out service recovery or empower our hosts to do so in the event of guest complaints when deemed necessary.
- Responsible for inspecting department on a regular basis and ensuring any maintenance and product improvements are actioned within the designated time frame.
- Ensure that Food & Beverage amenities, menus and wine lists will remain relevant and in keeping with Six Senses wellness and sustainability practices.
- Have a full knowledge of menus and specials of all outlets and a good knowledge of the wine list and be able to recommend wine in absence of sommelier.
- Responsible for monthly inventory of physical assets and beverages.
- Supervise and review storage to ensure stock is on hand, properly stored and in line with Six Senses control and hygiene standards.
- Jointly develop and oversee beverage programs including alcoholic and non-alcoholic offerings, and analyse sales trends and adjust beverage offerings accordingly.
- Thorough knowledge of all facilities and services offered by the property.
- A high standard of personal appearance, grooming and hygiene, plus comprehensive knowledge of safety, security and emergency procedures will be maintained by myself and all hosts in line with brand and statutory requirements.
- Ensure that interaction and communications between departments within the property are clear and effectively maintained to support the smooth running of the department.
- Ensure that all activities within the department are carried out ethically, honestly and within the parameters of local law.
- Department’s operational budget is adhered to, and all expenses, including payroll will be continually monitored and controlled to drive department’s performance, while taking into consideration the preservation of required standards.
- Directly support F&B Director in operational strategies and actions in revenue and expense management initiatives.
- Prepare and submit legally required and confidential documentation related to the operation.
- Attend or conduct the designated meetings and briefings as instructed by the Director of F&B.
- Perform any additional duties given to me by my manager, Resort Manager or General Manager.
Qualifications
To execute the position of Food & Beverage Manager, I must have the required qualifications, technical skills and experience in a similar role in luxury hotels with proven results and includes the following:
- Possess a Bachelor’s degree in Hotel Management, F&B Catering Operations or related field or Diploma in Catering or Business and more than three years’ experience in a similar role, preferred.
- Two or more years experience in similar or greater role in luxury resorts.
- Excellent command of Thai and English both spoken and written.
- Serve Safe certified manager
- Technical skills include Advanced MS Office – Word, Excel, PowerPoint and Outlook. I am also familiar with various hotel systems including OPERA and INFRASYS and/or Other POS platforms.
