Cluster Pastry Chef
Position overview
- This leadership role oversees all pastry production for restaurants, lounges, in-room dining, banqueting, and outside catering, ensuring consistency, innovation, and exceptional quality across both properties.
- The ideal candidate is a modern, well-rounded pastry professional with a strong foundation in classic techniques, excellent leadership skills, and the ability to deliver high-volume production without compromising on craftsmanship or presentation.
Key Responsibilities
- Dual-Property Operations: Oversee daily pastry/bakery production and workflows across two hotels.
- Creative Menu Design: Develop signature desserts and retail items for fine dining, lounges, and seasonal promotions.
- High-Volume Events: Lead execution for large-scale banquets, weddings, and high-profile diplomatic events.
- Leadership & Training: Mentor teams, manage scheduling, and uphold IHG culinary standards.
- Commercial Management: Drive cost control, inventory accuracy, and HACCP food safety compliance.
Qualifications & Requirements
- Experience: 5–7+ years in Pastry (inc. 2–3 years in leadership). Luxury/International brand background preferred.
- Technical Mastery: Modern plated desserts, viennoiserie, chocolate, and high-volume buffet displays.
- Management: Proven ability to lead multi-outlet operations and high-production teams.
- Soft Skills: Creative, disciplined, and a "hands-on" mentor.
- Languages: Fluent Thai; Good English.
